Vanilla Shortbreads


Difficulty: Easy

Makes 12-24 depending on the size of the biscuits


  • 150g of butter cut into small pieces, plus extra for greasing
  • 225g of plain flour
  • 125g of caster sugar
  • 1 teaspoon of vanilla essence (or however much you like really)


  1. Grease a baking tray lightly with a little butter or line the tin with greaseproof paper
  2. Sift the flour into a large mixing bowl and rub in the butter with you fingertips until the mixture looks like breadcrumbs
  3. Stir in the caster sugar and vanilla essence
  4. With your hands, form a firm dough out of the ingredients
  5. On a lightly floured surface, roll out the dough ball to your desired thickness and use a cutter of your choice to create little shortbreads
  6. Now place these biscuits on to the baking tray
  7. Bake in a preheated oven, 180C/35OF/Gas Mark 4, until cooked – this is the trickiest part. If you overdo it the biscuits will go rock hard and because they don’t really change colour, you’ll have to keep checking on them to make sure they’re cooked but not overdone
  8. Transfer the vanilla shortbreads to a baking tray and leave to cool completely before dusting with a little caster sugar
